Frugal Recipe for Leftover Ham: Creamy Ham and Potato Soup


I'm making this sometime this week with leftover Easter Ham. S

Do you have a lot of Ham leftover from Easter? Here is a yummy recipe for Ham and Potato Soup that uses ingredients you probably have at home and is super tasty and filling!

Ham and Potato Soup:

4 Cups Chicken Broth
4 Cups Peeled & Cubed Potatoes
2 Cups Ham, chopped and cubed (you can add as much or as little as you like)
1/2 bag frozen corn (you can add as much or as little as you like)
1/4 Cup Minced Onion
1/2 teaspoon Seasoning Salt
1 8 oz cream cheese, in chunks

Directions:
Combine broth, ham, onions, spices in a large pot. Boil on medium.
You can either cook the potatoes in with this mixture, or cook them in the microwave and then scoop out the insides once they've cooled a little. I usually opt for the microwave, and then I scoop them out of the skins and throw them in the pot. Then I take the potato masher and smash them up a bit, but you can leave them in chunks if you prefer.
Add the cream cheese, in scoops or chunks, and whisk 'till smooth.

Serve with a crusty roll, some cheese and crackers, or salad and it's a warm and hearty dinner!! My kids loved this soup as well- it's an easy meal for the whole family!
