Easy Corn, Tomato, and Cucumber Summer Salad (or dip) Recipe!


Here is an easy and healthy summer salad that you can make for your next BBQ or potluck!

Summer Salad:

Ingredients:

2 cans of sweet corn (or about 4 cups fresh corn from the cob)
4 cups mini cucumbers, peeled and diced
4 cups thinly sliced tomatoes (you can use grape tomatoes or cut up larger ones)
2-3 Tablespoons White Vinegar
1-2 Tablespoons Olive Oil
1-2 Tablespoons Sugar
dash of salt and pepper

Directions:

Prepare all the veggies and put together in a bowl.
Add the other ingredients together in a separate bowl and stir. Add to the veggies and mix.
Allow to "marinate" in the fridge (the longer the better) and serve cold.

You can eat this with lettuce as a salad, or with tortilla chips as more of a "dip", or just by itself with a spoon!

This will serve a large family, or you can have leftovers in the fridge. It's great to take with you to a picnic!

There are tons of variations to this salad-- I've seen it before with peppers, avocado, chick peas, mozzarella cheese or feta cheese, cilantro, celery, or onion, etc. Just add whatever you like!
