Here is an simple recipe for Crock Pot Chicken Noodle Soup
2 chicken breasts
2 large carrots, peeled and chopped
2 celery sticks, diced
1 onion, peeled, or 1 teaspoon onion powder
1 cup water
4 cups chicken broth
2 cups (dry) egg noodles
salt and pepper to taste
Add everything except the noodles to the crock pot and cook on low for 6-7 hours or on high for 4 hours.
Take the onion out (if you added a whole onion).
Take the chicken out and place on a cutting board. Shred with forks and cut to your desired size. Add the chicken back to the pot.
Add the noodles and cook for one more hour.
This serves 5-6. You can easily double this for a large crowd or if you want plenty of leftovers.
