Chewy Energy Bites Recipe
This recipe is super easy because it involves ingredients you probably have at home. I love it because it makes a lot of yummy snacks for my kids, and it keeps me from buying snacks at the store that have lots of preservatives and food coloring in them!
My hubby loves them as well and takes them to work for a snack.
The pictures don't do these justice... I know they kinda look like meatballs in the picture. Hahaha! But trust me, you will LOVE these and your family will too! Give them a try!
2 1/2 C Rice Krispies
2 C quick oats
optional: 1/2 cup additional mix-in ingredients (like shredded coconut, chopped nuts, raisins, etc.)
1/2 C honey
1/2 C brown sugar
2/3 C peanut butter
1 teaspoon vanilla extract
1/2 C chocolate chips
Combine the Rice Krispies and Oats in a large bowl.
In a small saucepan, heat the honey and brown sugar over medium heat, stirring occasionally. Let it boil for about a minute and then remove from heat.
Add the peanut butter and vanilla and stir until melted.
Pour into the bowl with the Rice Krispies and Oats and mix well.
Allow it to cool for 5 minutes and then add the chocolate chips
Press into meatball-size balls and place in an airtight container.
You can double this batch and freeze half as well!
These make a yummy snack or even a quick breakfast. My kids LOVE these and they are usually gone in no time!
