Easy and Healthy Breakfast Cookies


I made these a few weeks ago and they were so yummy! Plus, they are SUPER filling and go well with a cup of coffee!


Ingredients:

2 Cups Quick Oats
3/4 teaspoon Salt
1 teaspoon Cinnamon
1 Cup Peanut Butter (or Almond Butter or Sunflower Seed Butter or Wow Butter)
1/2 Cup Honey
1/4 Cup Apple Butter
1 Large Banana (Mashed)
1/2 Cup Raisins
1/4 Cup Ground Flaxseed (optional)


Directions:

Combine ALL ingredients in a bowl and mix together. Dough will be thick.

Preheat Oven to 325 degrees Farenheit. Line cookie sheet with parchment paper. Drop by round spoonfuls onto cookie sheet and flatten a bit with the back of a fork.

Bake for 15 minutes or until edges are slightly brown. Cool completely on cookie sheet, then store at room temperature in a tupperware or ziploc bag.
