Delicious and Easy Mini Banana Chocolate Chip Muffins (my kids' favorite!)

Mini Banana Chocolate Chip Muffins


If you like Banana Bread, you've got to try these mini muffins. They are SOOOOO good. I could literally triple this recipe and there still wouldn't be enough for my kids and husband. They gobble them up so fast!

Next time you have some super ripe bananas around, save them for this recipe. In fact, why don't you "pin" this recipe right now, so you don't forget about it! I promise, if you try them, you won't regret it!

Mini Banana Chocolate Chip Muffins

Ingredients:
1 stick butter
1 C sugar
2 eggs
3-4 very ripe bananas, mashed
2 C flour
1/4 C milk
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 C mini chocolate chips

Directions:
Preheat your oven to 350 degrees and grease your mini muffin tins. Set aside.
In a large bowl, cream together the butter and sugar.
Add eggs and beat till creamy.
Add bananas and milk and stir.
Add the flour, baking soda, baking powder, and salt and stir until combined.
Fold in the chocolate chips.
Fill your muffin tins about 1/2 to 3/4 full.
Bake for about 15 minutes (check them around 13 minutes) or until golden brown on top and edges. Let them cool in the muffin tin for a few and they'll be easier to pop out.



You should get about 48 mini muffins.

These will freeze well, but I doubt you'll have anything left to freeze! My kids gobble them up right away!
