Cheesy Smoked Sausage, Veggies, and Rice Recipe

Here's a quick and yummy dinner that's perfect for any night of the week!

Cheesy Smoked Sausage, Veggies, and Rice

You'll need:

1 tbs olive oil
1 tbs butter
1 lb smoked sausage or kielbasa, thinly sliced
1 small red bell pepper, seeded and chopped (you can use 1/2 pepper if you prefer)
1 small green pepper, seeded and chopped (you can use 1/2 pepper if you prefer)
2 cups broccoli florets
2 cups cooked rice
1 tsp garlic powder
1 tsp onion powder
1 cup shredded cheddar cheese

Here's what to do:

Heat butter and olive oil in a large skillet until hot.
Add the sliced smoked sausage. Cook, stirring frequently, for about 5 minutes until sausage begins to brown.
Meanwhile, cook white or brown rice in a separate saucepan.
Add the red bell pepper, green pepper, and broccoli to the sausage. Cover, reduce heat and cook about 5 minutes, stirring occasionally.
Add the cooked rice, garlic powder and onion powder. Cook on low heat and stir to combine and heat through.
Remove from heat and add the shredded cheddar cheese. Stir in cheese until it’s melted and serve immediately.

It was a big hit and even the picky kids ate it (only one picked out the peppers) ;)
